Vegetable pullav is a beautiful and flavorful blend of spices, vegetables, and rice. It is a very convenient yet tasteful recipe. We can do as many variations with this recipe. This can be cooked in a pot, pressure cooker, stovetop, and even oven-baked. We can count it as nutritious and fulfilling. This is the most loved recipe in every household. 

This can be cooked with two different methods – the one-pot which we call pullav and the dum-cooked method which is gravy-style pullav or biryani. The taste from both methods is brilliant, the only difference we face is time consumed. One pot method is best for busy weekdays and for special occasions prefer dum cooked method. Vegetable pullav is the easy and convenient version of veg biryani. So let’s have a look at this-

Ingredients

Basmati Rice 

Ginger garlic paste

Whole spices

Onion

Tomato

Potatoes

Carrot

Beans 

Peas

Cauliflower 

Green coriander 

Procedure

  1. Take a bowl of rice wash it properly 2-3 times and let it soak for a good 20 min. 
  1. Meanwhile, get the vegetables washed and cut for the masala.
  1. Add 2 tablespoons of oil or ghee to a pressure cooker.
  1. After the oil gets heated, then gradually add one bay leaf, one green cardamom, ½ inch cinnamon, ½ teaspoon cumin, and 2 cloves. 
  1. When the whole spices crackled add one chopped green chili and one sliced onion into the mix and saute it well until it gets soft and slightly golden.

      6. Then add one teaspoon of ginger garlic paste and cook it until the raw smell of ginger and garlic goes off.

7. After that add all the chopped vegetables like potatoes, beans, carrots, cauliflower, and peas into the above mix sprinkle one teaspoon of salt on it, and cook it until it becomes soft. Stir it regularly for even cooking. The salt here helps the vegetables to cook properly.

  1. You can add soaked soya chunks for an extra taste.
  1. After this add chopped tomatoes and cook it until soft.
  1. Then add all spices ½ teaspoon turmeric, ½ teaspoon red chili powder, ½ teaspoon coriander powder, 1 teaspoon garam masala or biryani masala of your choice, mix them all properly and let it cook until they release their flavors in the oil.
  1. Add ½ cup water and let it cook and boil for 3-4 minutes.
  1. After a good boil add the soaked rice, and double the water according to the rice. Here we used one cup of rice so we can add two cups of water here. Stir well and mix properly the rice and vegetables and cover the lid.
  1. Now cook it for one whistle on medium-high flame until the rice absorbs water.
  1. Open the lid and mix well all the ingredients and garnish it with green coriander.
  1. And it is ready to serve. Serve it with curd or raita.

What vegetables are to be used in vegetable pullav/biryani?

Mixed vegetables other than onion, tomatoes, and potatoes are carrots, green peas, cauliflower, and beans. I used these vegetables in my recipe, but you can add more vegetables like beetroots, soya chunks, baby corn, spinach, cabbage, or paneer.

What is the difference between biryani and pullav?

The basic difference is the time taken in the procedure. Biryani has a complex procedure where as pullav is easy to make. biryani is a special occasion dish whereas pullav are for buys weekdays go-to dish.

Is biryani healthy?

Homemade biryani with lots of vegetables and fewer preservatives is a healthy option.

You can make it protein-rich by adding soya chunks and paneer in it. You can try any variation of this dish and make a healthier version.
