What does Garam Masala means? Garam Masala is an Indian whole-spice mix where all the spices are warm. Here, ‘Garam’ stands for Hot and ‘Masala’ stands for spice mix. Garam Masala has many health benefits in consumed in proper proportion. This is used in almost every Indian household.

 Garam masala has evolved as an important spice mix in Indian cuisine which adds extra flavour to the food. This evolved over the centuries through different culinary activities. This can be modified according to our preferences. This blend of spices is made from green cardamom, cinnamon, black pepper, coriander seeds, cumin seeds, cloves, fennel seeds, star anise, mace (javitri), nutmeg, black cardamom, and bay leaves. This mix adds life to your food and makes it more flavorful and lively.

In Ayurvedic science, Garam Masala is used in many Ayurvedic medicines because of its warming properties which help in healing the illness. From Ayurvedic Science, we got to learn many benefits of spices which are used to make the Garam Masala. From this, we also learned about the medicinal properties of spices and how they helped in healing disease. Now, we are using garam masala at our homes as medicine for our small illnesses.

Individual property of the Ingredients used in Garam Masala

1. Coriander seeds

Coriander seeds help in maintaining pitta dosh in our body. Adding this to our spice mix helps in adding volume to our dish. This is the base of the garam masala. This also helps in good digestion.  

2. Cumin seeds

Cumin seeds are rich in many nutrients like iron, calcium, magnesium, and vitamins which help in weight loss and blood sugar regulation. This is good for the metabolism of the body. Used in Garam masala or separately in every recipe.

3. Cardamom seeds  

Cardamom seeds are also known as the ‘queen of spices’. This is an important flavouring agent in Indian households. This helps in curing indigestion, bloating problems, gas and constipation. This contains a soft and pleasant aroma which is also helpful in curing bad breath problems and heart health.

4. Cinnamon 

Some researchers have shown that cinnamon can even cure cancer, what else do you need from a spice? Cinnamon is rich in polyphenols and has antioxidant properties. It also helps in lowering chronicle diseases. It also helps in regulating blood sugar levels after meals. Earlier cinnamon is used as a medicine to cure many infections.

5. Clove 

Clove is best for dental pains, sore throat, muscle pain, and headaches. It has very medicinal properties. It is us to give an aromatic, flavorful, and strong smell to Indian food. It is also used in toothpaste. It is used in both savoury and sweet dishes. 

6. Black pepper

Black pepper is very warm and provides heat to the spice mix. It has a spicy and pungent flavour. It is rich in medicinal properties helps in treating colds and coughs and other respiratory problems. The piperine in Black Pepper is good for our health and helps in the secretion of digestive enzymes for better absorption of nutrients. Also used in topical applications which helps in blood circulation and acts as an exfoliator.

7. Fennel seeds

Fennel seeds are cool and maintain a balance between the hot spices. This is very good for digestive purposes. This is used in food or even eaten raw, eating it raw after meals helps in better digestion. They have high fibre and low calories which promotes the secretion of digestive juice and helps in good digestion 

 8. Star Anise

This is a star-shaped spice used in Garam Masala. This is separately used in sweet and savoury dishes. It helps in treating cough, digestive problems and respiratory problems.

9. Mace 

We found that mace is the outer layering of the nutmeg seed which is sweet, warm and aromatic. It contains vitamins, minerals and some essential oils which are also used for perfumery things. This helps in digestion and treats nausea.

10. Nutmeg 

Nutmeg is a ball-like spice used in garam masala and also in beverages due to its slightly sweet taste. It offers a great flavour in baking also. It is used in medicines for its anti-inflammatory properties.

11. Black cardamom 

This cardamom is black and big in the cardamom family. It contains a strong smell and flavour. It has a different aroma and citrusy taste. Its shelf life is longer than that of green cardamom.

12. Bay leaf 

Bay leaf also known as tez patta. It is the aromatic leaf used in cooking. Its aroma depends on the freshness of the leaf. Using it a little makes a huge difference.

This is compulsory to use every spice in moderation as excessive intake may cause health problems. These spices are also harmful if consumed in large quantities. Persons with any medical condition or allergies consult their doctor.

Vegetable pullav is a beautiful and flavorful blend of spices, vegetables, and rice. It is a very convenient yet tasteful recipe. We can do as many variations with this recipe. This can be cooked in a pot, pressure cooker, stovetop, and even oven-baked. We can count it as nutritious and fulfilling. This is the most loved recipe in every household. 

This can be cooked with two different methods – the one-pot which we call pullav and the dum-cooked method which is gravy-style pullav or biryani. The taste from both methods is brilliant, the only difference we face is time consumed. One pot method is best for busy weekdays and for special occasions prefer dum cooked method. Vegetable pullav is the easy and convenient version of veg biryani. So let’s have a look at this-

Ingredients

Basmati Rice 

Ginger garlic paste

Whole spices

Onion

Tomato

Potatoes

Carrot

Beans 

Peas

Cauliflower 

Green coriander 

Procedure

  1. Take a bowl of rice wash it properly 2-3 times and let it soak for a good 20 min. 
  1. Meanwhile, get the vegetables washed and cut for the masala.
  1. Add 2 tablespoons of oil or ghee to a pressure cooker.
  1. After the oil gets heated, then gradually add one bay leaf, one green cardamom, ½ inch cinnamon, ½ teaspoon cumin, and 2 cloves. 
  1. When the whole spices crackled add one chopped green chili and one sliced onion into the mix and saute it well until it gets soft and slightly golden.

      6. Then add one teaspoon of ginger garlic paste and cook it until the raw smell of ginger and garlic goes off.

7. After that add all the chopped vegetables like potatoes, beans, carrots, cauliflower, and peas into the above mix sprinkle one teaspoon of salt on it, and cook it until it becomes soft. Stir it regularly for even cooking. The salt here helps the vegetables to cook properly.

  1. You can add soaked soya chunks for an extra taste.
  1. After this add chopped tomatoes and cook it until soft.
  1. Then add all spices ½ teaspoon turmeric, ½ teaspoon red chili powder, ½ teaspoon coriander powder, 1 teaspoon garam masala or biryani masala of your choice, mix them all properly and let it cook until they release their flavors in the oil.
  1. Add ½ cup water and let it cook and boil for 3-4 minutes.
  1. After a good boil add the soaked rice, and double the water according to the rice. Here we used one cup of rice so we can add two cups of water here. Stir well and mix properly the rice and vegetables and cover the lid.
  1. Now cook it for one whistle on medium-high flame until the rice absorbs water.
  1. Open the lid and mix well all the ingredients and garnish it with green coriander.
  1. And it is ready to serve. Serve it with curd or raita.

FAQs

What vegetables are to be used in vegetable pullav/biryani?

Mixed vegetables other than onion, tomatoes, and potatoes are carrots, green peas, cauliflower, and beans. I used these vegetables in my recipe, but you can add more vegetables like beetroots, soya chunks, baby corn, spinach, cabbage, or paneer.

What is the difference between biryani and pullav?

The basic difference is the time taken in the procedure. Biryani has a complex procedure where as pullav is easy to make. biryani is a special occasion dish whereas pullav are for buys weekdays go-to dish.

Is biryani healthy?

Homemade biryani with lots of vegetables and fewer preservatives is a healthy option.

You can make it protein-rich by adding soya chunks and paneer in it. You can try any variation of this dish and make a healthier version.

Indian fusion pasta is a beautiful blend of Italian pasta with a touch of Indian spices. It can be molded in any form and taste, we can say this is the easiest and yummiest Italian recipe made in Indian households. This universal recipe is cooked as a breakfast, evening snack, or school lunch. Let’s make the best and easiest way to make the best Indian fusion pasta at home.

Ingredients-

  1. Penne pasta or any other pasta of your choice
  2. Oil 
  3. ¾ teaspoon salt
  4. 2 teaspoons ginger garlic paste
  5. ½ cup chopped carrot 
  6. ¼ cup chopped capsicum 
  7. ¼ cup Broccoli
  8. 2 tablespoons sweet corn 
  9. ¼ cup Bell peppers 
  10. 1 fine chopped onion
  11. 2 medium chopped tomatoes
  12. ¼ cup green peas
  1. ¾ teaspoon coriander powder
  2. ½ teaspoon turmeric powder.
  3. ½ teaspoon cumin powder
  4. ½ teaspoon Kashmiri red chilli powder
  5. 2 teaspoons pasta masala
  6. ½ teaspoon garam masala
  7. ¼ teaspoon black pepper
  8. 1 tablespoon tomato ketchup
  9. Mixed herbs seasoning
  10. Cheese 

Procedure-

      1.For this amazing recipe take 1½ cups of pasta and wash it once with normal water. Also, put 6 cups of water in a deep container and let it boil.

         

  1. Put the washed pasta into the container after a good boil, put ½ 

         teaspoon salt and some drops of oil in it. Let the pasta boil for a 

         good 8-10 minutes until it becomes soft.

 

  1. After this off the lid, drain the pasta into a strainer, and wash it with 

         With the cold water.

                                                                       

  1. Along with this boiling process make the masala for the pasta.    

         Add 2 tablespoons oil to the pan add ginger garlic paste and                     

        finely chopped onions, cook the onions for a minute until it turns

        little golden.

 

  1. Then add all the veggies carrots, capsicum, broccoli, sweet corn, 

         And bell peppers and saute them for 2-3 minutes until they become 

         soft.

 

  1. Then add chopped tomatoes tomato ketchup and salt

        according to your taste Mix all the veggies and cook them until  

        It looks pulpy and soft.

 

  1. Now, add ¼ teaspoon turmeric powder, ¼ teaspoon cumin powder, 

        ¼  teaspoon black pepper powder, ¼ teaspoon Kashmiri red chili 

        powder, ½ teaspoon coriander powder garam masala, and       

        Pasta masala. Mix all the ground spices with the veggies and cook 

        them Until they release some oil. Releasing oil is a good indicator

        That the spices are cooked.

 

  1. Now add ½ cup water to it and cook on high flame till a boil where  

       masala looks saucy and aromatic.

 

  1. add the boiled pasta to the masala and mix them well.

 

  1. add some Cheese, seasoning, and coriander leaves to it for extra    

        flavor (this is completely optional). Now mix and serve the hot  

        Indian-style pasta and enjoy!

 Mainly Italian recipes are nonspicy recipes but when they get fusion into Indian style the spice level increases with a touch of Indian spices.
